Chungwa - "orange" in Swahili - is our first ever co-ferment and produced by the Alpine Estate in Nyanza, Western Kenya.
Orange pulp is added to carefully selected coffee cherries and placed in a sealed anaerobic environment. Yeasts and bacteria feed on the added fruit sugars alongside the coffee mucilage, transferring pronounced, distinct fruit aromatics directly to the bean.
The controlled, limited oxygen environment allows the producer to guide how sugars, acids and microorganisms interact during the co-fermentation process, resulting in a coffee with additional layers of flavour and character.
Following the co-fermentation, the coffee is carefully washed and dried to preserve the flavours developed during processing.
The cup is distinctive and expressive, winey, with notes of tropical fruits and orange blossom. We recommend that the coffee is enjoyed on a Hario V60 or espresso.
